Created unashamedly for connoisseurs with some of the rarest malt whiskies found on Speyside. The reddish-gold colour bears witness to the exceptional maturity of the whiskies that make up Bennachie 21 Year Old. Each whisky has spent over two decades, and some much longer, in specially selected oak casks until they are judged to have reached the peak of their maturity. During this time, the wood breathes and a considerable proportion of the contents of each cask, known as the 'angel's share' evaporates into thin air. But it's a sacrifice worth making, because each whisky mellows over time, developing its individual flavour and full potential. Released when they have come of age for use in Bennachie 21 Year Old, these malts have been expertly chosen to embrace the best characteristics of the Speyside region. Elijah Craig 12-year-old is a true Small Batch premium Bourbon, and had that distinction before the term even existed. Bottled exclusively from a dumping of 100 barrels or less, the brand carries the name of Rev. Elijah Craig, the Baptist minister widely considered the 'Father of Bourbon.' He discovered the method of making true Kentucky Bourbon when his stored his wares in barrels that had been charred in a fire. Elijah Craig is highly acclaimed - it was awarded 'Best of the Best Bourbon' in 2001 by Whisky Magazine and received a Double Gold Medal at the San Francisco World Spirits Competition. Whiskey expert Stuart MacLean Ramsay writes, 'Rich, full bodied and warming with sweet oak, caramel and rye flavors; thick finish with notes of licorice and vanilla.' Jim Murray describes Sheep Dip in his 2006 Whisky Bible as 'Young and sprightly like a new-born lamb, this enjoys a fresh, mouthwatering grassy style with a touch of spice. Maligned by some but to me a clever accomplished vatting of alluring complexity'. Much mythology has grown up around whisky but in reality a great whisky does not have to be the product of one distillery nor should its age be a measure of quality. Richard Paterson, Scotland's renowned and only third generation master blender created the Sheep Dip vatting by marrying together several single malt whiskies. The whiskies are aged between eight and twelve years in quality 'first fill wood,' each adding unique characteristics to produce an exceptional product. Sheep Dip despite its iconoclastic name is a genuinely great whisky. The name came about because British farmers have long referred to whisky as Sheep Dip. There was a time when farmers distilled their own 'home-made' whisky and in order to avoid paying taxes to the revenue man hid the whisky in barrels marked 'Sheep Dip'. Farmers' merchants continued this tradition by entering cases of whisky as Sheep dip on farmers' bills and so 'pulling the wool' over the farmers wives eyes. Colour: Rich, golden copper highlights. Nose:n Delicate and refined. Soft sensual floral notes arise in perfect harmony supported by an attractive array of complex fruit flavours.
