Awarded a gold medal at the 2005 International Wine & Spirit Competition. David Stewart, The Balvenie Malt Master has selected only from the finest vintage casks that were laid down during his early time at The Balvenie over thirty years ago. David’s long experience in maturation has enabled him to create this rare and especially fine thirty year old single malt Scotch whisky. By marrying The Balvenie slowly aged in traditional Oak casks and also in Oloroso Sherry Butts, David has created a rich, mellow Scotch whisky with unusual depth and complexity. The traditional Oak – previously used to mature Bourbon – imbues warm honeyed tones, intense floral sweetness and distinct notes of vanilla, whereas The Balvenie matured in Sherry Wood displays a rich depth of colour, a dry oakiness and even greater refinement. The product of a lifetime’s work, ‘Thirty’ has been bottled at natural strength to capture all the signature characteristics of The Balvenie. The Balvenie Thirty is already receiving industry accolades and consumers are equally impressed. In a blind taste test, members of our online Club enthused about The Balvenie Thirty: ‘This is one of the finest malt whiskies that I have tasted.’ ‘Fantastic whisky, has a typical Balvenie character but a nutty sweetness, long and beautiful.’ Silky smooth and honeyed on the nose with mellow oaky tones and hints of candied orange peel. The Balvenie Thirty has great depth with rich dark chocolate, hints of plum, marzipan and caramelised pear. An exceptionally smooth and warming finish with gentle spice and lingering sweetness. scottish whisky

Dewar’s 12 is a perfectly balanced marriage of carefully selected 12 year old malt and grain Scotch whiskies, created by Dewar’s sixth Master Blender, Tom Aitken. This perfectly balanced taste is achieved through the marrying process, originally pioneered by the first Master Blender, A J Cameron. Only malt and grain whiskies of the highest quality are used to create this rich, fruity and delightfully mellow whisky. The Marrying Process The Dewar’s marrying process takes fine Scotch whiskies at their peak of perfection and improves upon them. Having created a blend of the finest Scotch whiskies from the different regions of Scotland, Dewars Master Blender then allows them to rest for a further period in exclusively reserved vintage oak casks, ensuring that their individual flavours and aromas harmonise to achieve the perfectly balanced and exceptionally smooth Scotch that is Dewar’s 12. Marrying these superb whiskies adds a smoothness that science cannot explain, but which your taste will at once discern. Limited Edition Each and every bottle is numbered and stands as a mark of exclusivity, with Dewar’s guarantee of quality. Deep amber and rich. A full fruity nose, blending together sultanas and raisins with a hint of Scottish heather, forming a perfectly balanced, mellow whisky. A rich, fruity sweetness, giving way to a well rounded warm mouth feel with just a hint of oak. A rounded, medium to full bodied whisky. A long, full flavoured, lingering finish. scottish whisky

It is matured for a minimum of 15 years in a combination of sherry and bourbon oak casks then finished in new oloroso sherry casks to develop its generous and rewarding flavours. Matured first in bourbon and sherry casks, then finished in selected sherry butts, this is an elegant single malt of enormous charm. Colour – Golden amber. Nose – A confection of marzipan and the alluring fragrance of geraniums, with hints of sherry and orange blossom, and a light smokiness. Taste – Soft and spicy with a lightly toasted oaky flavour, overlaid with a sherry-sweet nuttiness mixed with ripe apricots and toffee that shamelessly seduces the palate. Finish – Gentle and mellow, with a distinct spiciness and subtle hints of mint. scottish whisky

Dewar’s Signature is the culmination of more than 150 years of blending tradition, yet few will ever be privileged to experience a whisky this sublime, this rarefied and this complex. At the heart of this blend is Aberfeldy Single Malt, aged beyond its years, adding distinction and maturity to the other fine and rare whiskies specially selected for Dewar’s ’signature’ style. The Marrying Process Only with the final extra ‘marrying’ in vintage oak casks, a stage both expensive and time consuming, do the individual whiskies harmonise so that the mellow flavour of Dewar’s Signature can reach its exquisitely balanced maturity. Limited Edition Strictly limited quantities of Dewar’s Signature are released, each bottle numbered by hand and its quality guaranteed unconditionally. Each bottle carries the Dewar signature and, with it, the reputation of generations. Deep golden amber. Sweet and balanced. Rich, fruity mellow notes of sultanas, raisins, apples and honey with vanilla and toffee overtones. Sweet and smooth with a full bodied creamy texture and mouth warming effect. Full bodied. Long and pleasant with a slightly dry finish. scottish whisky

Launched in March 2004, this is the first whisky distilled after the re-opening of Benromach in 1998 and is the first whisky distilled by Gordon and MacPhail. Using only the finest peated malted barley and the purest spring water from the nearby Romach hills, Benromach Traditional is hand made by their experienced distillers, before being matured in hand selected oak casks at the distillery. The pace is a little slower in the heart of Speyside, they take their time, checking each stage by hand, personally ensuring only the highest quality spirit is filled into oak casks that have been carefully selected by hand. And it doesn’t stop there. The casks, full of new whisky, are laid down to mature at the distillery where their experienced distillers regularly check them. Only when it has matured to their high quality standards, do they bottle the whisky and proudly label it – Benromach. Michael Jackson is internationally the most widely published author on whisky. His Malt Whisky Companion is the world’s best selling book on the subject and is in its revised 5th edition. Jackson is a Master of the Quaich. His tasting notes… Colour: Pale, iridescent, greeny gold. Nose: Ozone. Flowery. Fresh mint. Herbal. Balsamic. Pine log fire. Body: Light. Drying. Palate: Earthy. Bison grass. Tree bark. Finish: Juniper. Lemon pith. Citric. Orange peels. Comment: Assertive. Aperitif. scottish whisky

Much of the whisky has been stored in 100-litre casks, which produces an exciting, powerful ageing process. Also used were newly manufactured Swedish oak casks, made using oak that was planted on the island of Visings – 160 years ago and intended for use in building warships for the Swedish navy. The base is an Elegant recipe, stored in bourbon casks of first fill quality. All stored in the Bodas mine, 50 metres down inside the primary rock. The colour is light yellow, with hints of amber. The nose is fruity with citrus, pear, apple, honey, light oak with hints of lightly toasted bread and fresh, buttery caramel. The flavour is fruity and subtle, with citrus, caramel and honey. A light hint of oak can be noted at the end. The aftertaste is well-adjusted and balanced, with hints of dark chocolate. For optimal flavour, the alcohol strength has been adjusted to 46.1% using naturally purified water from the Valbo Ridge.

Created unashamedly for connoisseurs with some of the rarest malt whiskies found on Speyside. The reddish-gold colour bears witness to the exceptional maturity of the whiskies that make up Bennachie 21 Year Old. Each whisky has spent over two decades, and some much longer, in specially selected oak casks until they are judged to have reached the peak of their maturity. During this time, the wood breathes and a considerable proportion of the contents of each cask, known as the ‘angel’s share’ evaporates into thin air. But it’s a sacrifice worth making, because each whisky mellows over time, developing its individual flavour and full potential. Released when they have come of age for use in Bennachie 21 Year Old, these malts have been expertly chosen to embrace the best characteristics of the Speyside region. Aromas of vanilla, sandalwood and spice are present on the nose. The taste is rich and full-flavoured with an aromatic tang and nuances of passion fruit. The finish is medium dry and exceptionally long. scottish whisky
